This sauce originated in Naples, Italy. It is said that the Prostitutes (puttana’s) needed to make something quick and nourishing between “appointments”. This sauce was created for just this reason. It has the flavors of Southern Italy – very intense, chunky and rich in flavor.

- 1/4 cup olive oil
- 2 T finely minced garlic
- 28 ounces can San Marzano tomatoes
- 1/2 cup gaeta oliveshalved and pitted
- 3 T anchoviescoarsely chopped 1 can
- 2 T capers
- 1 1/2 Tsp coarse salt
- 1/4 tsp hot red pepper flakes
- 1/4 cup fresh parsleychopped
- 1 lb linguine
- 1/2 cup parmigiano reggianograted
