Puttanesca Sauce

This sauce originated in Naples, Italy.  It is said that the Prostitutes (puttana’s) needed to  make something quick and nourishing between “appointments”.  This sauce was created for just this reason.  It has the flavors of Southern Italy – very intense, chunky and rich in flavor.

Ingredients
Instructions
  1. In a medium saucepan, heat olive oil over low heat. Add garlic and cook until light gold, about 10 minutes.
  2. Crush tomatoes by hand, leaving juice behind, and add tomatoes to pan. Add olives, anchovies, capers, coarse salt and red pepper flakes. Simmer gently over medium heat for 20 minutes. Adjust seasoning and add parsley.
  3. Cook pasta and stir in cheese, then add sauce and stir.
Recipe Notes

Sauce can be made several hours ahead and reheated.  It freezes well too.
