Macaroni and Cheese Galley Chef Style

Macaroni and cheese Galley Chef style is, by far, the best macaroni and cheese I’ve ever had.  Try this recipe once and you’ll never want a different recipe again.  It’s creamy, tangy and nutty all at the same time with that little bit of buttery crunch on top.  Make it as a side dish or put a tablespoon-full into a bite-size cup for a great little nosh with a cocktail.

Creamy, tangy and nutty macaroni and cheese, the perfect comfort food.
  1. Preheat oven to 350 degrees. Combine all the cheese in a bowl. Saute onion in 3 T butter over medium low heat until translucent. Add flour and cook 3 minutes. Add milk, whisking to combine, and cook until thick. Add the Nutmeg, Black Pepper and Cayenne Pepper. Add all the cheese and cook until melted.
  2. In a separate pan, bring Water to a boil and add Salt. Add the Macaroni and cook until tender. Strain the Macaroni and place in a bowl. Add the milk and cheese mixture. Toss to combine. In a small sauté pan, melt 3 tablespoons butter and add the Panko Breadcrumbs, Thyme, almonds and Lemon Zest. Place the combined Macaroni and Cheese into a shallow baking dish and top with the grated and the Breadcrumbs. Bake in a 350°F oven for 20 minutes and serve immediately.
